A simple yet delicious way to enjoy fish the Mexican style. A proven recipe that will please even those who are not-so-keen on fish. Also a time saver for cooks in a hurry who still want to serve a real meal. When served with salad -the way it’s traditionally served in Mexico- it makes a healthy meal. Have picky children at the table? Try giving them this dish.
Ingredients 1 lb of fish fillets- Tilapia, bass, or any other fish 1 cup of flour 3 eggs Salt and pepper Frying oil 3 cloves of garlic 3 limes How to prepare Rinse the fish fillets with cold water. Shake the excess water off. Put them on a platter and sprinkle them with the juice of one lime, salt and pepper. Leave them on the platter while you prepare the rest of your ingredients, but don’t leave the fish out of the refrigerator or sitting in the lime juice for more than 10 minutes. If it stays in the lime juice too long it will fall apart. Keep it in the fridge for sanitary purposes. In a bowl, mix the flour, salt and pepper. In another bowl, mix the eggs, salt and pepper. Heat the frying oil, for best results, you’ll want to use a large frying pan, but you may also use a fryer. To check readiness of the oil and to add a little flavor put the cloves of garlic in the hot oil. When the garlic turns golden brown, take them out. Your oil is ready to put the fish in it. One by one, roll the fish fillets in the flour mix until they are completely covered. Then dip them in the egg batter. Next, put them in the hot oil. They will cook very quickly, just check for golden brown edges and then turn them. When the other side is golden, they are ready to serve! It only takes a few minutes.
